Hungry Harvest Haul - December 12, 2021

I’ve had a wonky few weeks of meal planning this last month, since we traveled for Thanksgiving, then Mike was out of town for work three of the past four weeks. I admit that when it’s just me in the house, I don’t cook as often or eat as healthy - oops! But now that we’re both home for the first time in four weeks, I’m using Hungry Harvest to help get my meal planning and healthy eating back on track! I got all of this rescued produce for just under $20 including delivery and those delicious looking pretzel buns! (Flowers not included 🙃)

Tropical Chicken Tacos


I love a good fruit salsa, and I've made this particular dish before, so tacos it is! The kiwi pineapple salsa is always delicious - mixed with lime zest, juice, jalapeno, and red onion. Served with fajita style peppers and onions, and of course garnished with avocados and lime wedges.

 

Baked Cranberry Chicken


Well hello Christmas. I meant to make a second Thanksgiving meal with the green beans and potatoes here, but I think it ended up much more Christmas! The main dish here, the cranberry chicken, doesn't use any of my current Hungry Harvest items, but it does use tons of other produce, so if your box comes with lemons, garlic, cranberries, sage (which we swapped out for rosemary), onion, or carrots (which we swapped out for celery), definitely make this meal! Seriously, besides cranberries, you probably have everything in your pantry and fridge already. The white wine broth brings out the sweetness in the cranberry which I loved. Pair with a green veg and starch, and dinner is served!

 

Pretzel Bun Turkey Sandwiches


Once again trying to puzzle piece my way into incorporating fruit into my savory meals! Pretzel buns strike me as warm and cozy, so I knew a sweet honey mustard paired with turkey, lettuce and apple slices would pair well together. I had some leftover bacon from the week before, so I added that in too! I made my own honey mustard this time, which was delicious! No photo this time, as these sammies went fast!
