Whenever I see a more unique produce option in the Hungry Harvest lineup, I go for it. This week's unique options were golden beets and tomatillos, but I think the jalapeños ended up being the star of this week's Hungry Harvest box. I'd never made beets before so this was new to me, but on the other hand, I love tomatillos so that was a no brainer. I decided to get a bag of jalapeños to go with the tomatillos as well, but only needed one or two for my tomatillo recipe. We then decided to make jalapeno simple syrup with the other peppers! Making cocktails is always fun, and these did not disappoint! The broccoli and onions were used in several easy sheet pan dinners and lunches throughout the week.

Tomatillo Salsa and Adobo Chicken
Recipe Inspiration: Chipotle -Rubbed Chicken Sheet-Pan Dinner
This dinner is always delicious! We made it back in 2018 as a part of our 52 New Recipes project. The salsa couldn't be easier - just roast the tomatillos, jalapeño, and a few other veggies on a sheet pan with the chicken and acorn squash! Blend together and ta-da! The acorn squash and salsa combo is unexpected but so good! Served with a bit of avocado on top!
Orange Glazed Roasted Beets

Beets are not my favorite, but I figured we'd try them this week for something a little different. I had no idea what to do with them, but luckily there was a golden beet recipe in this cookbook that I was gifted for Christmas! The recipe calls for roasting the beets and then drizzling with an orange glaze, plus gives directions for a zesty orange Greek yogurt for dipping. Googled helped me to decide beets go well with beef brisket, so we slow cooked a brisket and made Hasslelback potatoes to complete the meal!
Jalapeño Simple Syrup
Recipe Inspiration: Take Two Tapas Chili Pepper Simply Syrup
I knew I was going to use one or two jalapeños in the tomatillo chicken recipe, but what about the rest? Enter this jalapeño simple syrup, which will stay good in the fridge for a few weeks! Making the simple syrup was so easy - just boiling the water and sugar, letting the peppers steep, blending and straining. I left the seeds in because we like the spice in this house!
So far we've made three different cocktails with the simple syrup: a jalapeño margarita, a spicy paloma, and a kiwi mojito. All three were delicious, a little lime juice goes a long way to mask the dense puree taste and bring out the kick from the jalapeños.
