My favorite was of course the air fried chicken tenders and fries, of course, but the other meals were great too! We snacked on the pears and dried jackfruit during the week. Crispy Lamb Skewers

I found this lamb sausage recipe in a cookbook on our shelf and thought we'd give it a try since it had a tomato-cucumber salad accompaniment. The lamb was tasty, seasoned with paprika, cumin, coriander, garlic, and parsley, and browned up nicely on the cast iron skillet! Served with naan and a dollop of hummus and tzatziki.

I'm all about salads that aren't really salads (aka no greens) because it just feels different and refreshing from the standard garden salad. Trying to diversity my healthy lunches is a fun game for me, and this slaw didn't disappoint. This salad was perfect for my Hungry Harvest box, since it used cucumber, mango, and the mini peppers. I tossed with some purple cabbage and the dressing and ate it as lunch for a couple of days.
Air Fryer Crispy Chili Lime Chicken Tenders, French Fries & Avocado Ranch

Okay this was a fun dinner! The chicken tenders were special because they're Whole30 compliant, paleo, keto, gluten-free, and all around tasty! I didn't have any Tajin seasoning like the breading specified, so I improvised with chili powder, paprika, and fresh lime zest. I quickly chopped the russet potatoes into fries and air fried those in batches before making the air fried chicken tenders, and then just reheated when ready to eat. The recipe came with a recommended avocado ranch, but I wanted a simpler recipe and used one that said Greek Yogurt could be used instead of mayo. We dumped all of the tenders and fries onto our big wooden cutting board and ended up with a Fries and Tenders Charcuterie Board. Definitely not mad at it!

As you know, I have a huge sweet tooth, but in an effort to be healthier, I am trying to cut down slightly on my sweets. I do enjoy a sweet treat after lunch and dinner though, so I thought I'd give these chocolate covered oranges a try. This recipe was super runny, but it did successfully harden up in the fridge after about 20 minutes. I had some leftover chocolate so I drizzled it onto clusters of macadamia nuts as well, which made cute little treats as well.
