Last year around this time, Mike and I received a Hungry Harvest box with all the perfect veggies for a Thanksgiving dinner, so we made a Thanksgiving inspired dinner just the two of us a week early (check out the post here). We loved it, so we knew this year that we had to make another mini Thanksgiving together before celebrating the holidays with family.
This year, we made it on Veteran's Day since I had the day off and was able to cook all day. I made the cookies earlier in the week, Mike marinated a chicken overnight, and I woke up early to make the dough for the sage butter rolls. Then we made a few other side dishes, some homemade and some not, to complete our meals. In addition to the recipes listed below, we had classic boxed stuffing, cranberry sauce, and gravy.

Whole Roasted Chicken

A turkey is a little too big for us, so chicken it was! this chicken was marinated with various seasonings overnight, then we filled the cavity with lemon, garlic, thyme, and rosemary, honestly whatever was in our fridge at the time! We didn't have kitchen string to tie the legs together, so I twisted some foil and swirled that around the legs to keep them together. The chicken was delicious and perfectly cooked in one hour!
Sweet Potato Casserole

We made this sweet potato casserole last year, and I loved it so much so I knew I was making it again this year. The sweet potatoes are so soft with a pumpkin-pie like treatment, and topped with sweet and nutty crumble. It's so dang good, y'all, and it gave stuffing a run for it's money!
Thyme Carrots

Last year we made green beans, and for this year's simple veggie, we opted for carrots. These roasted thyme carrots were simple and delicious! I halved most of the carrots, and quartered a few of the larger ones. Then just drizzle with fresh thyme and a few kitchen staples. Ta-da! An easy but healthy and fresh side to compliment those more complex and time consuming Thanksgiving dishes.
Sage Butter Rolls

Who would have thought the rolls would have been the most extensive recipe for this year's Thanksgiving? These rolls are so good, thanks to the delicious aromas of sage butter. Since I've made these rolls before (blog post here!), I knew going in how to budget my time for baking and cooking everything. I made the dough in the morning, let it proof, then rolled it out and buttered it up. I let these the prepared dough sit in the fridge all day, until I was ready to bake. I pulled them out mid-afternoon so that they'd be done before I needed the oven space for everything else. Right before dinner, I warmed them up in the oven, and Thanksgiving dinner is complete!
Snickerdoodles with Eggnog Frosting

Can't have Thanksgiving dinner without dessert, am I right? I made this cookie recipe from the Half Baked Harvest Super Simple cookbook. These snickerdoodles were pretty simple - just making and refrigerating a log of dough, rolling in cinnamon sugar, cutting and baking, and then whipping up a simple eggnog frosting. The eggnog frosting was a bit potent at first, but the next day, the cookies were more subdued and kept soft all week long.
