#02: Brown Butter Chocolate Chip Cookies
Can't go wrong with classic chocolate chip cookies, but you can upgrade them! These cookies used browned butter which add a nutty flavor. The chocolate chips (or chunks in this case) came from my trusty Ghirardelli semi-sweet chocolate bars. And finally, they're finished off with a sprinkle of sea salt. Mmmm.
#69: Chocolate Macarons
My friend and I attempted making macarons for the first time following this recipe. I think we need a second chance because our macarons didn't really turn out looking like macarons. The chocolate cookie looked like a brownie cookie (delicious, but definitely not correct), and the filling was good but we didn't realize how long it would take for it to harden in order to pipe it. I think I'll find a different macaron recipe to try next, and then make my way back to this one at a later time!
#74: Chocolate Sandwich Cookies
Now we all love Oreos, but have you ever tried to make your own? This recipe was quite easier than I thought it was be. It entails making cut-out cookies from a chocolate cookie dough, whcih turn out perfectly thin, crispy, and most importantly, sturdy. The cream filling was oh-so-fluffy and I loved the how the star tip of my piping bag gave the cream an extra special detail. These were so fun and gourmet!
#74: Thin Mints (Variation)
The Chocolate Sandwich Cookie above have a few variations listed, including various filling flavors, but also with a Thin Mint variation - everyone's favorite Girl Scout Cookie! In this variation, the chocolate cookie is made just like it is for the oreos, and then coated in a layer of mint chocolate using semi-sweet chocolate and mint extract. They did take quite a while to dry but in the end they were delicious! Definitely keep these in the fridge or freezer!
