52 New Recipes in 2020

Well if my reading goal suffered in 2020, my cooking and baking skills thrived! If you didn't know, I set and met a 52 new recipe goal in 2018, which was a lot of fun! I didn't actually make a recipe goal in either 2019 or 2020, but I tallied it up for fun at the end of both years and what do you know? I made exactly 52 new recipes in 2020!!


Only two of these recipes were made before quarantine started, so safe to say that I really leaned into the whole home-chef role during quarantine. In terms of baking, I made my first ever batches of bread, donuts, and pop tarts this year. My subscription to Hungry Harvest's rescued produce box also fostered creativity with so many fun dinner recipes. Oh and can't forget to shout out Half Baked Harvest (not to be confused with Hungry Harvest) - the food blogger I discovered early in the year, where I pulled TONS of my recipes from, both sweet and savory!


See below for just a few highlights from the list, plus the list of all 52 new recipes at the bottom of this post! Half Baked Harvest recipes indicated by the acronym HBH.

 

#02: Cannoli Dip

Recipe Inspiration: Homemade Hooplah Cannoli Dip


Date Made: 02/02/2020


Thoughts: This dessert dip was inspired by one of my friends who first made it a few years back. It's been a big hit at many of her pot-lucks since then, so I figured I'd steal the recipe and share it with others! I took it to a super bowl party, one of the only pot-lucks of the year! Serve with waffle cone pieces!

 

#03: Cast Iron Pizza

Recipe Inspiration: Adam Ragusea Cast Iron Pan Pizza (YouTube Video and Recipe here)


Date Made: 03/20/2020


Thoughts: Mike found this awesome cast iron pizza recipe at the start of quarantine. It uses homemade dough, which was fun since bread making was all the rage when quarantine started. What's cool about this recipe is you essentially season the pan, not the pizza! You add some olive oil, cornmeal, and oregano to the bottom of the pan, and then stretch the pizza dough over the pan. The recipe shares a homemade tomato sauce, but Mike swears by Don Pepino canned pizza sauce so we just used that instead. Our favorite toppings are jalapeños and pepperoni or sausage! So easy and so good!

 

#07: Pear Stuffed Sweet Potatoes


Date Made: 04/12/2020


Thoughts: I made these sweet potatoes back in April when we got our first Hungry Harvest box, which you can read about in this post! This recipe was so good and would be perfect for a fall or winter dinner, plus it's vegan and paleo.

 

#11: Swirled Garlic Herb Bread


Date Made: 04/21/2020


Thoughts: Okay so this is THE recipe that made me fall in love with Half Baked Harvest. I saw her post about this bread on her Instagram and she sold it as being super fancy looking but so much easier than you think. Her blog post on it shows the entire process in photos which made me confident enough to try it. It was so much fun to make and turned out so delicious and also huge!! We were going to make this as a side for a basic tray dinner, but I think we ended up just eating bread for dinner that night. 😂 I had meant to make this into a blog post but never got around to it. You may spy it some time here in the next few months! Keep an eye out!

 

#14: Brown Sugar Cinnamon Pop Tarts


Date Made: 05/09/2020


Thoughts: By this point in the year, quarantine was in full swing and I was looking for more challenging baking projects. Enter pop tarts. The brown sugar cinnamon flavor was amazing!! Don't get me wrong, these take a lot of time and effort to make, but entirely worth it! You can find more details about these and other flavors I tried in this blog post.

 

#15: Cinnamon Sugar Donuts


Date Made: 07/13/2020


Thoughts: And then came the donuts. I bought a donut tin from Target as a quarantine purchase as well. These buttermilk donuts were delicious on their own, but of course we had to cover them in butter and cinnamon sugar. Nothing not to like here!

 

#19 Chipotle Corn Chicken Enchiladas


Date Made: 07/27/2020


Thoughts: We had ourselves a fiesta with these enchiladas. Stuffed with adobo chicken, corn, poblano pepper, and layered with salsa verde, these enchiladas were a hit. I added cheese to Mike's side - don't worry. Served with some fresh avocados and lime wedges.

 

#23: Homemade Hummus

Recipe Inspiration: Cookie and Kate Hummus


Date Made: 08/16/2020


Thoughts: I had been wanting to make homemade hummus for a while now. It's one of those kitchen staples we always have in the fridge for snacks, spicing up a dinner, or when friends come over. What was noteworthy about this recipe though, was that our one and only mini 3-cup food processor had broken that day. So I whipped out the Magic Bullet and what do you know? The Magic Bullet actually worked wonders! The hummus turned out so perfectly thick and creamy. Who would have thunk? Topped with some lemon olive oil and sumac.

 

#25: Chocolate Profiteroles with Homemade Whipped Cream

Recipe Inspiration: Mary Berry's Chocolate Profiteroles (from her cookbook; similar recipe here)


Date Made: 08/29/2020


Thoughts: A friend gifted me Mary Berry's cookbook for my birthday earlier that summer, so when they were coming over for a dinner party the next month, I wanted to show off my skills! I decided to make Mary Berry's chocolate profiteroles. The choux pastry dough puffed up nicely in the oven, and I was able to pipe in homemade whipped cream before covering in chocolate. I used this recipe for the whipped cream - it took about five minutes with the electric mixer to turn the heavy cream until it became whipped, FYI.

 

#28: Patatas Bravas


Date Made: 08/31/2020


Thoughts: After getting a bag of shishito peppers in my Hungry Harvest haul, I decided to make tapas at home (which you can read more about in this blog post)! Mike's favorite food blogger is Chef John from Food Wishes, so we tried his recipe here. They got perfectly crispy and golden brown using his frying method!

 

#34: Prosciutto Wrapped Apple Butter Chicken


Date Made: 09/30/2020


Thoughts: Of course I had to highlight one of my apple picking recipes from September. This one called for roasting a few apples along side the prosciutto wrapped chicken, as well as apple butter, which I had made a few days prior. The flavor combination of the chicken, apple butter and cured meat was phenomenal.

 

#41: Buffalo Chicken Egg Rolls


Date Made: 11/02/2020


Thoughts: I had so much fun with this recipe! The egg rolls were super easy to make, you just make the chicken filling, spoon it onto the egg roll wrappers, and fold! A few tips helped to ensure that the egg rolls didn't tear, stayed wrapped, and got crispy in the oven, which helped me for the taquitos and dumplings I'd make in next months. Yay for baked versions of your favorite fried foods. Find out what to serve it with as a full meal in this blog post! These would make excellent super bowl snacks too.

 

#48: Sweet Potato Casserole


Date Made: 11/19/2020


Thoughts: I made Mike and I a mini Thanksgiving dinner for 2 in mid-November, which turned out great. It was the first time we had roasted a whole cornish hen ourselves, and the first time I'd ever tried to make a full Thanksgiving dinner myself (scroll to the bottom of this post to see). I really enjoyed this sweet potato casserole made with lots of butter and brown sugar.

 

#50: Sesame Chicken Dumplings in Spicy Broth


Date Made: 12/09/2020


Thoughts: This one has lots of promise but still needs to be perfected. I've never made dumplings before and we don't have a steamer or steaming basket, so this recipe seemed promising since it called for pan-frying them. However, my dumplings ended up a little stuck to the pan, and a few tore apart when trying to remove them. I'm not sure if I waited too long or not long enough before removing them from the pan, or if I needed more liquid. I'll have to try again with a more simple dumpling recipe! If you're a dumpling expert though, we loved the flavor of the chicken inside, the spicy broth with shallots, and the crispy bread crumb topping.

 

#52: Oreo Balls

Recipe Inspiration: A dear friend's recipe given to me at my bridal shower, but similar recipe here)


Date Made: 12/12/2020


Thoughts: I made Oreo balls for part of my Christmas Cookie Extravaganza, and then again when I wanted my own the next week, and then again with my family before Christmas, and then again, and again, and again... They are just too easy and too delicious not to make.
