My husband was out of town one weekend in March for a bachelor party, which meant we both probably ate a little less healthy than we should have... But no worries, Hungry Harvest made for easy meal prep and getting our eating back on track the week after a very indulgent weekend. This box was a mix of veggies that I knew we could use in a variety of meals and would make easy dinner prep for a week neither of us would probably want to cook much. Oh and the blood oranges made for a fun baking project at the end of the week!

Meal Prep and Mix-n-Match Dinners
A little different this round-up... partly because we didn't have any specific recipes to make, and partly because I didn't get any photos of anything but the cookies below...
I used the celery to make my healthy Greek yogurt favorite chicken salad for lunch meal prep. This bunch of celery was the perfect size - not too many stalks which meant less food waste!
For the first dinner this week, we made baked chicken with blistered shishito peppers, roasted asparagus, garlic naan, and my favorite lemony chimichurri dipping sauce.
Since we had finished the naan and chimichurri the previous night, I cut up the remaining chicken, shishito peppers, and asparagus, and tossed them with stir fry sauce and served over rice for the next dinner. A super easy way to use up leftovers but change up the flavors!
And for the final dinner from the box, I made sausage with potato wedges, baked zucchini, and more of that delicious chimichurri with the remaining lemons.
Olive Oil Cookies with Blood Orange Glaze

Here's where the star of the box, blood oranges, came into play. After adding blood oranges to my box, I went through my cookbooks to find a recipe. This cookie was one of the only recipes I found that used blood oranges, so I figured why not! The olive oil cookie itself is basically just an understated shortbread. I zested the blood oranges and squeezed fresh juice from about 2 of the fruits to make this glaze. It was very well received - not too bitter as a glaze, and paired well with a simple shortbread cookie! Also made for quite the photo. We used the remaining blood oranges to make margaritas one night.
