A few friends and I got outside last weekend to go apple picking at Larriland Farms in Maryland! We always seem to miss apple picking season, so this year we made sure to go in September before the fruit disappeared.
I picked a total of 22 empire apples, as well as raspberries, sunflowers, and wildflowers. It was such a fun excursion... and an even more fun week of making apple recipes!
Here's a look at the different recipes we incorporated the apples into the past week. I'm proud of myself for finding ways to use the apples in all different types of meals, from lunches and dinners to breakfasts and desserts (apple blondies and galettes for breakfast - that's fine, right?). Snacked on any extras throughout the week, with Nutella and peanut butter!
Apple Butter

Apple butter seemed to be a common theme in the recipes I found this week, so I decided we could make our own. I halved this recipe and it made about 2 cups of butter, which seemed to be the perfect amount! I first tasted apple butter at my in-law's, where they live in rural Maryland, and I've loved it ever since.
Prosciutto Wrapped Chicken & Apples

2 Apples + Apple Butter
For this recipe, I spread apple butter on top of chicken, sprinkled with some blue cheese, and then wrapped it in prosciutto. The hardest part about this was wrapping the chicken without tearing the prosciutto, but the flavor combination was delicious. The apples in the skillet retained some of their sweetness which I loved. Served with a side of quinoa and some crusty bread to dip into the pan sauce.
Apple Butter Blondies

My kitchen smells so incredible after making these - the brown butter, the apple butter, and the brown sugar mixture is heavenly. I delivered a few blondies to friends this weekend as well, and they were very well-received. Delicious fall sweet treat... maybe I'll eat some for breakfast too!
Apple Sage Turkey Burgers

Don't be fooled by the photo - there are apples on top of the burger, but also IN the burger! Grating apples and sage into the burger mixture kept the burgers juicy! I added a squeeze of lemon to the aioli mixture, and wish I made more. We served it with the suggested salad, as well as sweet potato chips.
Apple Galettes

My mom suggested swapping pears out for apples in this galette recipe. I almost halved this recipe but I'm so glad I didn't! These are so good, and may need to become a staple! They're relatively easy besides rolling out the dough to a circle, but the good thing is the circle didn't need to be perfect since you fold over the edges anyways!
Quinoa Apple Sunflower Seed Salad

I used some of the leftover quinoa from the prosciutto dinner to make my favorite quinoa apple salad for lunches during the week. I added pumpkin seeds into the mix in place of almonds. I could have made my own raspberry dressing with the recipe included, but I just used the store-bought dressing I already had.
