A 30th Birthday Recipe Roundup

This past week my fiancé, Mike, turned 30! It was super-low key this year because, you know, Covid. In order to make it special, I made some new recipes this week, some requested specifically by Mike himself! There's no theme to this post other than a few new recipe reviews to share below! Let me know if you make any!

P.S. Peep that Wicked Weed IPA that was one of Mike's birthday gifts! We had it when we visited Asheville back in September, which you can read about in this post!


P.P.S. One of those wrapped gifts is a book, which I'll show in my 2020 Holiday Book Gift Guide post later this month! Mike yelped when he opened it. Keep an eye out!

 

Black Widow Smash


Over Halloween the week before, I made this spooky cocktail for a Hocus Pocus viewing with friends! It was tasty and I had leftover ingredients, so I decided to make it again for Mike during the week. It's a tequila based cocktail that uses fresh blackberries, muddled with rosemary, and topped with sparkling water!


 

Shakshuka

Recipe Inspiration: Chef John Shakshuka


For his birthday breakfast, Mike requested I make shakshuka! He's obsessed with Chef John and Food Wishes so using Chef John's recipe was a no brainer, plus having the accompanying recipe video is always nice! I cut the recipe from 6 eggs to 4 and omitted the mushrooms. Very delicious and pretty easy!



 

Buttermilk Waffles

Recipe Inspiration: Krusteaz Buttermilk Waffles


I am a sweet breakfast person, so I opted to include waffles in addition to the shakshuka. We received a waffle maker from our wedding registry this summer, so this was the perfect time to break it out. The waffle maker worked well - didn't need to grease it at all! I remember when I added it to the registry, Mike complained about it, saying "What?! Don't add this - When have you ever made me waffles?!" Well Mike, I've never had a waffle maker before. Needless to say, it stayed on the registry!

 

Lemon Bars

Recipe Inspiration: Mary Berry's Iced Orange & Lemon Bars (from her cookbook; similar recipe here)


Finally, Mike requested lemon bars as his birthday dessert! I'd never made lemon bars before, but thankfully, I had just the cookbook to help me out. These turned out great! Once they were finished baking, I drizzled a thick icing over them and let it set. Having the bars and icing cooled helped me to cut them into perfectly straight clean squares.
