I stumbled upon this beautiful cookbook recently, and I love it so much! The Forest Feast by Erin Gleeson is a beautiful blend of cooking and art. Each of her vegetarian recipes are simple, good for you, and tasty, and are accompanied by her whimsical water coloring and stunning photos from her cabin in the woods. I love cookbooks, but I love that it doubles as a beautiful coffee-table book as well.
I was lucky enough to snag a copy on major sale from Book Outlet. Book Outlet is an online book retailer that sells overstocked or bargain books at outlet prices! Think books returned to the store but still in new condition. There are so many books to choose from, so if you’re interested in making your first purchase, I have a referral link for $10 off your first order, and I’ll get bonus points too!
Strawberry Arugula Wrap
Lunch wraps get a new taste with these strawberry arugula wraps. This recipe was a sweet lunch alternative to your standard wrap. Plus, who doesn't love sprinkling a little balsamic vinegar on top of everything?
Asparagus Straws with Pesto
These were stupid easy but made our dinner a bit more fun! I served these little asparagus straws with marinated chicken, roasted potatoes, and a pesto which was listed in the book a few pages back, along with a bunch of other easy dips and dressings. I loved how simple this dish was, and how nicely it matched my farm-fresh yellow flowers that week!
Honey-Pepper Fresh Figs
I loved these fresh figs, but what's more is I love how simple it was to elevate them to the next level! I drizzled with honey, red pepper flakes, mint, and feta, which made for nice bite-size snacks for having friends over. I bet a little hot-honey would make these pop even more if that's your thing.
