From the Avery Approved vault of unfinished drafts, comes the Half Baked Harvest Super Simple #CookTheBook post - Part 3! I had started this post almost two years ago, when I made the pizza and snickerdoodles for the first time. I wanted another recipe or two to round out the post, which I didn't make until just now! So here's a quick round-up from one of my favorite cookbooks. Enjoy!
No-Knead Pizza Dough
The basic no-knead pizza dough was just so-so compared to some of the other homemade doughs we've made in the past. We used it to make the sweet and spicy pineapple pizza listed below!
Sweet and Spicy Pineapple Pizza
I really enjoyed this pizza! The pizza sauce is actually a spicy chipotle salsa made from scratch with fire roasted tomatoes, chipotle peppers, and sesame seeds! The sweet pineapple balances out the spicy sauce. I added a bit of spicy sausage to the top (my favorite pizza topping), and of course added cheese to *Mike's side* of the pizza!
Walnut-Crusted Chicken
I was inspired by a Waldorf Salad to make this walnut chicken with an adapted version of the Autumn Harvest Salad also listed in the cookbook. You definitely need to chop (or pulse pulse pulse) the walnuts super fine for the crust to work well. And don't sleep on the dry hand/wet hand method for breading the chicken. I struggled there haha - but otherwise, it was delicious. I paired it the salad below - such a sweet fall dinner!
Autumn Harvest Salad
This salad was pretty basic (but good!) - maple coated pecans, apple slices, and mixed greens, but the real interesting part was the caramelized shallot and cider vinaigrette! It's pretty much just what it sounds like - but the warm and savory flavors here balance out the sweet salad and nutty chicken that I served it with. Very good!
Snickerdoodles with Eggnog Frosting
These snickerdoodles are such a fun way to incorporate the holidays into your baking. The dough is a simple slice & bake sugar cookie dough with a cinnamon sugar coating. But the real star of the show is the eggnog butter cream that gives it a little step up for the holidays. Though, I wouldn’t worry if eggnog isn’t your thing - the eggnog taste isn’t super strong (only two tablespoons after all) and actually gets a little more faint each day after baking.
