These stuffed dates are the perfect appetizer! A finger food secured by a toothpick, and a bite size surprise in each date.
Bacon Wrapped Stuffed Dates

Notes
Bacon: The bacon will crisp better if wrapped around the date in one layer. If the bacon layer is too thick, it won’t crisp properly.
Substitutions: Experiment with different flavors of goat cheese or use walnuts instead of pecans.
Ingredients
1 package thick cut bacon
1 pack medjool dates, pitted (~20 dates)
4 ounces goat cheese
20 pecan halves
1/4 cup brown sugar
20 toothpicks
Directions
Pre-heat oven to 375°F. Line a baking sheet with foil and spray foil with nonstick spray.
Open the dates lengthwise. Fill cavity with a small dollop of goat cheese. Press a pecan into the center of the cheese. Press the sides together to close the date.
Cut the bacon strip in half. Wrap each stuffed date with bacon. Only wrap the bacon around the date in one layer, just enough to secure the overlapped bacon with a toothpick. Trim the bacon if needed. Secure with a toothpick.
Dip each prepared date into brown sugar. Press sugar into bacon on all sides. Place dates on baking sheet.
Bake the dates for 10 minutes. Flip dates and bake for an additional 8 minutes.
To caramelize the brown sugar, set oven to broil and broil about 2 minutes per side, or until bacon is cooked.
Remove the dates from the oven and cool for at least 5 minutes.
