This weekend is Super Bowl Sunday, and while you might not be able to host a party, it doesn't have to stop you from making all the delicious game day snacks! Jalapeño Poppers

Make Ahead: You can prepare recipe steps 2-4 ahead of time, and store cut jalapeños and prepared sausage mixture separately in an airtight container in the fridge. When ready to make, pre-heat oven, assemble the poppers, and bake.
Substitutions: If you don't like jalapeños, you can use poblanos (larger poppers) or mini-bell peppers (for less heat). You can use medium or hot sausage, and add spices to taste. Can't find chives? Use green onions, or dice half of a yellow onion and add to the pan when browning the meat. Switch out the parmesan for your favorite cheese. I don't like cheese, so I just generously sprinkle it on top of half of the poppers rather than mixing it in! Your options are endless!
Ingredients
15-20 jalapeños
1 pound ground sausage
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and pepper to taste
8 ounces cream cheese, softened
1 bunch chives
1/2 cup shredded parmesan cheese
Directions
Pre-heat oven to 425°F. Line a baking sheet with foil.
Prepare veggies. Slice jalapeños lengthwise. Scrape out seeds and ribs with a spoon. Discard seeds, or set seeds aside to add to stuffing mixture if you like it hot. Finely chop chives.
Place ground sausage in skillet and season with garlic powder, onion powder, and salt and pepper to taste. Cook until browned. Drain.
Place sausage, chives, shredded cheese, softened cream cheese, and jalapeño seeds (if desired) into medium bowl. Mix until well combined.
Stuff jalapeños with sausage mixture.
Bake for 20 minutes or until tops are golden brown.
